When I make vanilla cupcakes I can’t eat just one. When they’re fresh out the oven and the frosting just sits on the cupcake it’s so delicious I can’t even handle it. I’m getting hungry just writing about this right now. If you haven’t noticed I LOVE to eat. For the second part of my baking series (Mini Oreo Cheesecakes was part 1) I’m going to make vanilla cupcakes which is a simple recipe and perfect for dessert. The best part about recipes like this is that a majority of the ingredients you most likely have at home.
I made the cupcakes cute and used sprinkles because deep down I’m still a child and I want all of my dessert to have color. I also made a batch with Almond Flour because I wanted to have a slightly healthier option as well (My BF suggested I try this so I can’t take credit). My pink dress is a recent purchase from the Gilt City Warehouse sale. I definitely didn’t bake in this outfit but it’s cute. The shoes are Kate Spade from a past Gilt City Warehouse sale. Similar pink dress looks below. Do any of you like to bake? It’s such a great way to relieve stress. And when the final product comes out perfect or nearly perfect it’s such a great feeling.
**When I added the almond flour I had to reduce some of the butter and milk I used to thicken the batter.
1 1/2 sticks of butter softened
1 1/2 cups of sugar
2 tsp Vanilla Extract
2 1/2 tsp Baking powder
1/4 tsp Salt
2 1/2 cups of Flour or Almond Flour
1 1/4 cups of Milk
